This is my Orange Chilli cake.

Prep. time: less than 30 minutes

Cook time: 10 to 30 minutes.

Ingredients: For cake you will need

85gm./3oz. butter, softened

Zest of 1 lemon

1 egg

1 tsp. chilli flakes

85gm./3oz self raising flour

85gm./3oz sugar

140gm./5oz. greek yoghurt

For Syrup you will need:

Juice of 1 orange

juice of 1 lemon

1 tsp. chilli flakes or fresh red chillies, chopped.

30gm./1oz. honey

Method:

Set oven at 220deg.C or 180deg.C for fan forced.

In a cake mixer combine butter and lemon zest. Add egg and chilli and mix. Add
flour and sugar and mix.

Grease two round shallow cake tins.

Divide the mix between the tins and place in oven for 10 minutes.

Prepare syrup by placing all syruo ingredients in a pre heated saucepan. Heat
2-3 minutes, stirring constantly.

Remove cakes from oven and remove from tins.

If time allows, allow cakes to cool a little.

Apply greek yoghurt to one cake and sandwich the other cake on top. pour over
the syrup. Cut into six pieces and serve.

Note: This cake is very moist and is best served in dessert plates. Accompany
with a big dollop of your favourite icecream.

For you chilli heads, this is to die for. Enjoy.
