SWEET HOT CHILLI SAUCE


(Darwin)

A bit hotter than the comercial stuff;

250 grams of fresh chillies
3 cups white vinegar
250 grams Australian sultanas
2 tablespoons of ginger
3 tablespoons crushed garlic - this can be varied to taste
3 teaspoons salt
3 cups of sugar

Chop the chillies and put in stainless steel saucepan with the sultanas, vinegar, ginger, garlic and salt.

Bring to boil and simmer until sultanas are soft about 45 mins.

Add sugar then stir until dissolved about 15 min .
take off heat and cool slightly, blend using a bamix thingo

DO NOT USE A BLENDER THE RESULTS ARE HORRIFIC AND TAKE WEEKS TO HEAL OR CLEAN UP OR BOTH

Pour into sterilised jars ,I prefer the smaller ones . Put cling wrap under lid to stop corrosion of steel lids
