Spicy seafood entree

A great little entree or side dish. Very versatile.

Ingredients:

  • prepared prawns (or mixed seafood)

  • 2 medium-large garlic cloves

  • 1-2 mature jalapeno chillies (you can vary with quantity and species of chilli)

  • 1 lemon

  • a coriander bunch

  • rocket leaves

  • olive oil

  • salt & pepper


Method:

  1. add prawns to a bowl

  2. crush garlic and add to bowl

  3. thinly slice chillies and add to bowl

  4. add the juice of half a lemon

  5. chop up coriander leaves and add to bowl

  6. drizzle olive oil into bowl

  7. add salt & pepper to taste

  8. mix all ingredients together in bowl (it's best marinated over night)

  9. fry up prawns

  10. serve on a bed of rocket leaves

  11. garnish with lemon zest, coriander stalks and drizzle with olive oil


You can experiment with incredients, e.g. for Italian:

  • instead of lemon use balsamic vinegar

  • instead of coriander use basil

  • add tomato

  • instead of serving on rocket leaves serve on a bed of pasta
