Simple but great! Chillie Relish

Any quantity of chillies, white onions, vinegar, garlic, brown sugar, salt.

The Method:

Remove stems and most of the seeds from chillies (leave more seed if you need more heat)and put through a mincer(Blender is not suitable).

To each cup of minced chillies, add 1/2 teaspoon of salt, 2oz white onions and 1 clove of garlic minced.

Put into a large saucepan, cover well with vinegar, bring to the boil and cook gently for 30min.

Measure pulp and add 1/2 cup of brown sugar for each cup of pulp.

Boil again for 30min then bottle and seal.

We save and use all the old small Vegemite jars for this.

It improves with age and some of our best is over 6 years old.

An old recipe but cannot be beaten.
