Chillie Dried Bananas

by Paula McGregor
(Paeroa New Zealand)

Ingredients:

  • Chilli powder freshly ground from my own home grown and dried Habanero or freshly sliced chillie

  • Fresh Bananas

Slice bananas full length in half with skin still on.

Cut half way thru the top stem of the banana from back side to the front of the inside curve then pull down inside curve to the bottom of banana .

This takes a skinny strip of the skin away exposing the banana flesh.

Then take sharp knife and slice from back outside curve to front all way to the bottom.

Now you have cut the banana full length in half.

Open banana in half and either use fresh or dried chilli, sprinkle dried or rub freshly cut chilli on the cut side of the banana.

Place on dehydrating trays cut side down on trays and peel off remaining skin.

Takes 24 hrs to dry depending on if you like them chewy or snap hard.

Very Yummy and the chilli helps with stimulating the metabolism so the treat is not quite so decadent.

I also used this method on my dried Fejoas.
Would be nice on Mango and Paw Paw.
