Been there, burnt my mouth out too

I had heard of chillie beer a few years back, but never found out the required quantity of chillie to be placed in each bottle.

I only brew in stubbies, so I dropped a small whole chillie in each, after topping and tailing each....

BIG MISTAKE!!!!

I had a icy cold beer that was red hot.... and great fun to give to the unsuspecting at parties.

As for the shorter shelf Life, I had no problems there, it remained good for well over 12 months for me.

Now that I am growing and drying my own chillies, I will revisit the chillie beer and see what I can do with it....

Yes, I like a good chilli beer as well.

Back when I used to home-brew I used to make mine by putting 120ml Tabasco into the wort prior to fermenting - used to give just the right heat level.

I'm curious as to why you're experiencing the shorter shelf-life. Capsaicin is quite a good anti-bacterial. In 2006 there was a series of tests done on hamburger patties and those with a little capsaicin in them (below taste threshold) lasted twice as long as those without.
